Is the Bible just a book really about Jewish history...?

Europe was pagan and open minded about accepting other peoples God's as long as theirs were not excluded. Probably Emporer worship and not Christianity is what pushed pagans over the edge into monotheistic religion. The Bible is a bit of history, theology and sociology all rolled into one.
